Lefse is a versatile Northern European counterpart to the tortilla, traditionally made from flour or potatoes. Popularly known in the United States as the Norwegian-American pastry par excellence, lefse has existed in Norway for generations. The tradition traveled with immigrants as they left Norway to make a new life in America. Communities of Norwegian-American descendents preserved the techniques of rolling lefse, a skill that Liz Gjellstad learned from her family and now shares with you.

LizElizabeth (Liz) Gjellstad has been making lefse for over 30 years. Learning to make lefse from her mother-in-law Hazel, Liz honed her skills and started her own business. She has provided this Scandinavian treat to lefse lovers across the country. Now she brings this traditional Norwegian staple into the contemporary American kitchen in this easy-to-follow DVD.
